Temps on the rise again, we stayed cool indoors, able to venture out to our animals periodically through the day to check on them and refill waters when needed.

*Daughter drawing..she works on her drawings daily, practicing with different mediums, she grows more confident in her abilities every day, excited to show us what she produces*
*This day she had brother find the pictures or tell her what she should draw and she did- he loved it*

*Vegetarian Home made Corn Chowder- Dinner*
6 Tbsp Earth Balance Soy Free Butter
6 Tbsp Flour
1 C Diced Celery
1 C Diced Onion
Salt / Pepper to taste
2 15oz Cans of Creamed Corn
2 C Fresh Corn
1 C Diced Red Potatoes
2 15oz Cans Veggie Broth
1 C Almond Milk
In Pan, heat butter- then saute onions and celery for 3 minutes, then add flour. Wisk for 3 minutes. Add both cans of Veggie Broth- wisk then simmer for 10 minutes. Add rest of ingredients and simmer on low-med for 20 minutes (or until you can put a fork into the potatoes)
Served with home made wheat biscuits.
